Edwin Noreña is a producer in Quindío, Colombia with a background in agricultural engineering and biotechnology, and a reputation for some of the most meticulous fermentation work in specialty coffee. His farm, Finca Campo Hermoso, is where this one was born. Friends know him as "El Alquimista" (the alchemist). After one sip, you'll understand why.
This coffee went through two careful fermentations. The first pulled a rich, sugary liquid (called the must) from the fresh cherry. The second used that must, combined with dried peaches, to infuse the coffee with stone fruit sweetness from the inside out. Then it was honey processed and dried slowly. A lot of steps. A genuinely remarkable result.
We're offering this as a blend with a washed Colombian, which keeps the peach front and centre without letting it completely take over the cup. Co-ferments this expressive can be a lot, and the balance makes it something you'd actually want to drink every day, not just once for the experience.
In the cup, think ripe peach, peach black tea, jasmine, and a candy-like sweetness that lands somewhere between a fruit gummy and a creamsicle. Sweet, layered, and just a little surprising every time.
